Ingredients

    medium sweet potatoes, diced

    olive oil

    cumin

  • 1

    can (15 oz) black beans, rinsed & drained

  • 8

    small corn tortillas

  • 1

    avocado

  • 2 tbsp

    plain Greek yogurt

  • 1 tbsp

    lime juice

Directions

  • Preheat oven to 400°F (200°C).

  • Toss sweet potatoes with olive oil and cumin. Roast 25 minutes.

  • Warm black beans in small pan.

  • Blend avocado, yogurt, and lime juice into creamy sauce.

  • Assemble tacos: tortillas + sweet potatoes + beans + avocado crema drizzle.
