Roasted Cauliflower Steaks with Chimichurri
Ingredients

large head cauliflower, sliced into 1-inch “steaks”
- 2 tbsp
olive oil
- 1/2 cup
parsley, chopped
- 1/4 cup
cilantro, chopped
- 2 tbsp
red wine vinegar
- 2
garlic cloves, minced
- 2 tbsp
olive oil (for sauce)
salt & pepper
Directions
Preheat oven to 425°F (220°C).
Brush cauliflower steaks with olive oil, season lightly with salt & pepper.
Roast 20–25 minutes until golden and tender.
Blend parsley, cilantro, vinegar, garlic, and olive oil into chimichurri sauce.
Drizzle sauce over cauliflower before serving.
