Roasted Cauliflower Steaks with Chimichurri

Ingredients

  • 1

    large head cauliflower, sliced into 1-inch “steaks”

  • 2 tbsp

    olive oil

  • 1/2 cup

    parsley, chopped

  • 1/4 cup

    cilantro, chopped

  • 2 tbsp

    red wine vinegar

  • 2

    garlic cloves, minced

  • 2 tbsp

    olive oil (for sauce)

  • salt & pepper

Directions

  • Preheat oven to 425°F (220°C).

  • Brush cauliflower steaks with olive oil, season lightly with salt & pepper.

  • Roast 20–25 minutes until golden and tender.

  • Blend parsley, cilantro, vinegar, garlic, and olive oil into chimichurri sauce.

  • Drizzle sauce over cauliflower before serving.
