Mediterranean Chickpea Salad

Ingredients

  • 1

    can (15 oz) chickpeas rinsed & drained

  • 1

    cucumber, diced

  • 1 cup

    cherry tomatoes, halved

  • 1/2

    red onion, finely chopped

  • 1/4 cup

    fresh parsley, chopped

  • 2 tbsp

    olive oil

  • 2 tbsp

    fresh lemon juice

  • 1/4 cup

    crumbled feta (optional, use reduced-fat)

  • salt and pepper to taste

Directions

  • In a large bowl, combine chickpeas, cucumber, tomatoes, onion, and parsley.

  • Whisk together olive oil and lemon juice, pour over salad.

  • Toss well to coat. Top with feta if desired

  • Chill 30 minutes before serving.
