Mediterranean Chickpea Salad
Ingredients
- 1
can (15 oz) chickpeas rinsed & drained
- 1
cucumber, diced
- 1 cup
cherry tomatoes, halved
- 1/2
red onion, finely chopped
- 1/4 cup
fresh parsley, chopped
- 2 tbsp
olive oil
- 2 tbsp
fresh lemon juice
- 1/4 cup
crumbled feta (optional, use reduced-fat)
salt and pepper to taste
Directions
In a large bowl, combine chickpeas, cucumber, tomatoes, onion, and parsley.
Whisk together olive oil and lemon juice, pour over salad.
Toss well to coat. Top with feta if desired
Chill 30 minutes before serving.
