Sweet Potato & Black Bean Tacos (with Avocado Crema)
Ingredients

medium sweet potatoes, diced
- 1 tbsp
olive oil
- 1 tsp
cumin
- 1
can (15 oz) black beans, rinsed & drained
- 8
small corn tortillas
- 1
avocado
- 2 tbsp
plain Greek yogurt
- 1 tbsp
lime juice
Directions
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil and cumin. Roast 25 minutes.
Warm black beans in small pan.
Blend avocado, yogurt, and lime juice into creamy sauce.
Assemble tacos: tortillas + sweet potatoes + beans + avocado crema drizzle.
